Pandan coconut waffles

This is a complicated recipe, involving blending pandan leaves, separating eggs and whisking the egg whites until they foam.
220g all-purpose flour
1 tbsp cornstarch (omitted)
2 tsp baking powder (replaced with bicarbonate of soda - can't find the baking powder!)
Pinch of salt (omitted)
45g castor sugar
2 eggs, separated
200ml coconut milk (replaced with 100ml coconut cream)
250ml of pandan juice (blend 10 pandan leaves with about 275ml water, strain) (used 12 leaves, about 200ml water)
50ml evaporated milk (replaced with 100ml low-fat milk)
4 tbsp butter/margarine, melted and cooled (omitted, forgot to add)
1 tsp pandan paste (optional) (omitted)
I understand that it looks a little absurd, with more omissions and substitutions than in a corrupt and violent soccer match.
Result? Not too good. Doesn't taste like the typical cakery ones at all.
The waffle maker gave me lots of trouble. It's hinged on one side so it tends not to make good contact with the batter on the far side, causing unevenly cooked waffles. Jan suggests putting a heavy pot or kettle on top of the maker, but the improvement wasn't good enough. Arrrrgh!
First one was a major flop. Stuck to the iron, too thin.
As for the taste, it's majorly unsweet. Should have guessed that, considering that there's only 45g of sugar in 6 large, thick waffles. Crispyness was great when fresh, but they turned soggy very rapidly. And the use of unboiled pandan sorta made the waffles have a slight bitter aftertaste. Tasted quite OK with honey, but not with peanut butter.
Eek.
Conclusion: Why bother?
Especially when store-bought ones are just slightly over a dollar each. It took 2 hours in all, from searching the fridge for the ingredients to the major clean-up (2 mixing bowls, scissors, 2 forks, 2 spoons, 1 small container, 1 tray, 1 blender, 1 waffle maker). And waffle makers don't exactly come cheap.
Get the freshly-made, store bought ones (I recommend Prima Deli)
